These look like Moroccan Ammonites, with the typically carved inner whorls. The inner whorls are frequently obliterated by extraction, and tend to get new whorls carved into them, to make them more sellable. The outside whorl is the body chamber, which becomes empty and instantly filled with mud. The inner whorls are the phragmocone, containing numerous chambers and normally filled with gases to provide buoyancy. Most of it is often preserved in a different way. Sometimes the inner whorls fosilize nicely while the former body chamber is squished or lost, sometimes otherwise. If the inner whorls are not preserved, they could be carved. Another funny detail is that the shell often changes sculpture with adult animals, for example the outer whorl of a female is usually much smoother than the inner ones.
