This is from the Cretaceous Eagle Ford formation in Texas. It's Approx. 4" x 2"

I was going to guess gypsum as well. Can you scratch the whiter area around the edge with your fingernail? Quartz and calcite wont scratch, but gypsum - being a little softer than the human fingernail sure will.

Y'all are making me hungry. Auspex: Before I tried it, I was prepared to not like scrapple, but when I finally did I actually liked it a lot. I haven't had it in YEARS, though. It may be time to fry up a batch :)

Ed: I just looked at the picture I posted again and I think you're right! It does look just like an overdone steak, lol. So the consensus is steak not gypsum, correct? :)
