How should I clean and polish my fossils?

I wouldn't polish those either.

I would leave them as-is, too. Unless they're caked with mud or something (apparently not), they won't need cleaning either.

They seem to be a nice sampling from whatever location. Be sure to record the exact location and keep the info with the specimens.

In order to polish them, they would first need to be finely sanded down, eliminating all of the outer sculpture and structure, which is one good reason for not polishing them. However, if you want them to have a slight sheen, you could apply a stone care product containing beeswax.

That's a great collection! I think they're nice as they are. As Kris has said a toothbrush will remove dirt and mud but if there isn't any to remove then there's no need. All that really needs doing in my opinion is to find a nice way to display them. :)
