I can't tell a difference at all. I am there with you, can be very difficult to see. Like @ynot said you need to train your eyes in the manner that ynot suggested to begin to see the differences . I still struggle sometimes . I recently polished up the broken end of a piece of fossil Reptile Bone I found years ago in I think Peterborough, UK. It was just a weather rock really and had no value to me but after polishing the one side, the cellar structure became very visible . So in fact it has become a good learning tool and quite a pretty piece too. It is on my shelve now but Mrs Rico did wonder why I was taking rocks form the garden and put them indoors. I can't tell a difference at all. I don't know if it works in your area, but in some of the areas I hunt we use the "lick test." Bone will sometimes stick if you touch it to the tip of your tongue (or will otherwise feel sticky if you touch it with wet fingers), petrified wood will not. Whether or not this will work is dependent on the fossilization process. For instance, this will not work with siliceous gem bone.
