I saw this Moroccan Ammonite displayed at Niagara Cave and knew it would be perfect sitting in one of the fireplace niches.

That is very showy for the mantle or even in the garden..

looks to be 6-8 inches.in dia..

It is 9 inches across and I gave $40 for it a couple of years ago at Niagara Cave. How badly did I get taken?

You didnt get taken at all... you got more than your moneys worth I think.. I would pay $40 for that specimen in a heartbeat even with a carved center.. Carving that center is worth more than $40 .. but I would have made it less obvious ..
